This recipe for A Very Tarty Teriyaki Bowl is a must try from Smashing Tarts chef Lisa Sullivan.
Ingredients
- 1 block of extra firm Tofu
- Soba noodles
- Carrots
- Sprouting broccoli
- Edamame beans
- Garlic
- Ginger
- Sesame seeds
- Spring onions
Teriyaki Sauce
- ½ cup Light soy sauce
- ½ cup Mirin
- 4 tbsp Sugar
Method
Combine and reduce Soy sauce m mirin and sugar in a sauce pan.
Cube tofu and allow to soak in sauce while preparing veg and noodles.
Bring pot of water to boil, and add soba noodles . Boil for 5 mins, strain and rinse in cool water.
Slice carrots, broccoli, Sautee with chopped ginger and garlic until just tender, add edamame beans until warmed through. Remove from pan.
Add cubed tofu to pan on medium heat and cook until crispy and seared in sauce.
Put noodles in large bowl, top with veg, and then tofu and pour remaining sauce from pan over top,
Garnish with spring onions and sesame seeds.
